Tasty Recipes for Bariatric Patients

Along with bariatric surgery (such as gastric bypass) comes an inevitable change in diet, as the surgery restricts the types of food one can eat. You have to eat appropriately but that doesn’t mean you can’t enjoy a balanced and flavorful meal, below are some recipes that will provide the nutrients your body needs, while still being delicious.

Faux Fried Chicken (makes 3 servings)

Ingredients:
1/3 cup reduced-fat buttermilk
1/8 tsp. paprika
12 oz. raw boneless skinless lean chicken breast tenders (about 10 pieces)
1/3 cup bran cereal (Original Fiber One® or similar type)
1/3 cup panko breadcrumbs
1 tbsp. dry onion soup mix
Optional: salt, to taste

Directions:
In a large sealable container or plastic bag, combine buttermilk with paprika and mix well.
Add chicken and coat completely. Seal and refrigerate for at least 1 hour.
Preheat oven to 375 degrees.
Prepare a large baking sheet by spraying it with nonstick spray.
Using a blender or food processor, grind cereal to a breadcrumb consistency. Pour crumbs into a large bowl.
Add panko breadcrumbs and onion soup mix. If you like, add a dash or two of salt. Mix thoroughly.
One at a time, remove each piece of chicken from container/bag, give it a shake (to get rid of excess buttermilk), coat it evenly with the crumb mixture, and lay it flat on the baking sheet.
Bake in the oven for 10 minutes. Flip carefully (tongs work well!), and then bake for an additional 10 minutes, or until outsides are crispy and chicken is cooked through.

Easy Low Carb Veggie Pizza (makes 8 servings)

Ingredients:
2 LaTortilla Factory low carb wraps (large)
½ cup reduced fat chive & onion cream cheese
½ cup light sour cream
1 package of dry Hidden Valley Ranch mix
1/8 cup shredded carrots
¾ cup raw broccoli
¾ cup diced tomatoes
1/8 cup diced green pepper
1/8 cup diced cucumbers
¾ cup Kraft Light shredded Colby & Monterey Jack cheese
½ cup sliced black olives

Directions:
Mix cream cheese, sour cream, and dressing packet together and spread evenly on tortillas
Top with veggies and olives and sprinkle with cheese.
Cut each tortilla into 4 pieces and serve

Fluffy Jello Dessert (makes 4 servings)

Ingredients:
1 box sugar-free jello, any flavor
8 T. of Cool Whip Free

Directions:
Make jello according to directions on box
Put in refrigerator to set
Once set, divide jello into four ½ cup servings
Thoroughly mix 2 T. of Cool Whip Free with each ½ cup serving

Fruitful Breakfast Wrap (makes 1 serving)

Ingredients:
1 whole wheat tortilla (small, 113 calories)
3 Tablespoons of regular ricotta cheese
1 Tablespoon of low-sugar, strawberry jelly
1/3 cup fresh, sliced strawberries

Directions:
Spread ricotta cheese and jelly on tortilla
Sprinkle sliced strawberries on top of ricotta cheese and jelly
Roll up tortilla and chow down!
